Delight yourself this lunchtime with a lightly-smoked salad fit for a king.
1 can of Smoked Sardines in Extra Virgin Olive Oil 106g
1 tsp pumpkin seeds
1 tsp sunflower seeds
2 tsp coarse mustard
1.5 tbsp olive oil (use the olive oil from the smoked sardines)
½ tbsp balsamic vinegar
10 g of arugula
30 g iceberg lettuce, finely chopped
½ tomato, cut into pieces
30 g cucumber, cut into pieces
15 g pomegranate seeds
1 tbsp dried / fried onions
- Bake the pumpkin and sunflower seeds in a dry (light) brown pan.
- Beat the mustard, sardine olive oil and balsamic vinegar to a dressing.
- Place the arugula and iceberg lettuce on a plate with tomato, cucumber and sardines on top.
- Sprinkle the dressing over the salad and garnish with pomegranate seeds, pumpkin seeds, sunflower seeds and the onions.
